ingredients
- 5 cups basmati rice
- 2 cups sliced mushrooms
- 1 onion (sliced)
- 1 tomato (chopped)
- ½ cup curd
- 1 tbsp ginger-garlic paste
- Spices: turmeric, red chili powder, coriander powder, biryani masala, salt
- Whole spices: bay leaf, cloves, cardamom, cinnamon
- Fresh coriander & mint
- Oil/ghee

A flavourful biryani with mushrooms and fragrant Kasia Basmati Rice.
- Cook rice with whole spices and salt until 90% done. Set aside.
- Heat oil/ghee and sauté onions until light brown.
- Add ginger-garlic paste, then tomatoes and cook soft.
- Add spices and curd; mix well.
- Add mushrooms and cook 4–5 minutes until tender.
- Add coriander and mint.
- Layer mushroom masala and rice in a pot.
- Add a little ghee or saffron milk (optional).
- Cover and cook on low heat for 10 minutes.
- Fluff gently and serve with raita.
