Mushroom Biryani

Mushroom Biryani Is A Rich And Hearty Vegetarian Delight. Tender Mushrooms Cooked With Aromatic Spices And Premium Basmati Rice, Finished To Perfection On Dum.

ingredients

  • 5 cups basmati rice
  • 2 cups sliced mushrooms
  • 1 onion (sliced)
  • 1 tomato (chopped)
  • ½ cup curd
  • 1 tbsp ginger-garlic paste
  • Spices: turmeric, red chili powder, coriander powder, biryani masala, salt
  • Whole spices: bay leaf, cloves, cardamom, cinnamon
  • Fresh coriander & mint
  • Oil/ghee

A flavourful biryani with mushrooms and fragrant Kasia Basmati Rice.
  • Cook rice with whole spices and salt until 90% done. Set aside.
  • Heat oil/ghee and sauté onions until light brown.
  • Add ginger-garlic paste, then tomatoes and cook soft.
  • Add spices and curd; mix well.
  • Add mushrooms and cook 4–5 minutes until tender.
  • Add coriander and mint.
  • Layer mushroom masala and rice in a pot.
  • Add a little ghee or saffron milk (optional).
  • Cover and cook on low heat for 10 minutes.
  • Fluff gently and serve with raita.
